This experiment is awesome! We get the jumbo rockets up into the air by putting water and liquid nitrogen in a 5 gallon PET container (not polycarbonate… because it will explode). We then flip over the container very quickly and the liquid nitrogen rises to the top where it gets trapped. Once the liquid nitrogen and water make contact the liquid nitrogen begins to evaporate and build pressure. This happens so fast that the newl formed nitrogen gas forces out the water below it (and then onto the ground) and in the process creates jet propulsion.
